Eating pink fish could prevent stroke and memory loss

By Charlene at 02/24/09 12:57

Stroke and memory loss can be caused by lack of blood flow to your brain.

The omega-3 in fish such as salmon or tuna might help the blood flowing freely to your brain cells.

During a study in which participants ate fish rich in the fatty acids 1 time a week, it was found they were 13% less likely to show any evidence of stroke or memory loss!

How it works: Omega-3s keep the walls of blood vessels elastic and ward off inflammation.

Want a recipe tip? Try this Lemon Salmon Burger:

Mix together the following ingredients in a medium size bowl:

  • 1 can salmon (16 oz(
  • 1/4 cup Italian seasoned bread crumbs
  • 2 T finely chopped onion
  • 1/4 cup parsley (fresh if possible)
  • 2 eggs
  • 2 T lemon juice
  • 1/2 t dried basil
  • Pinch of red pepper flakes

Form this mixture into patties firmly packed to about 1/2" thick. Heat about a tablespoon of vegetable oil and add patties when oil is hot. Cook 4 minutes per side or until browned.

For a nice sauce for the salmon patties, combine in a small bowl and add to patties:

  • 1 T lemon juice
  • 2 T light mayo
  • Pinch of dried basil

You can serve these patties with or without a bun, with or without the sauce. Maybe you could enjoy them with a tossed salad. Enjoy this great dish and preserve your brain at the same time!
